French Toast Casserole

 Super easy and delicious French Toast Casserole!

Ingredients
1lb sourdough bread cut into 1 inch cubes
5 eggs
1 1/2 cups almond milk 
1 tbsp maple syrup *i used @lakantosweetener maple syrup
1 tbsp vanilla extract
1/2 tsp cinnamon
pinch of nutmeg
1/4 cup kerrygold butter
2/3 cup brown sugar *i used @lakantosweetener golden sugar

Directions
Spray a 13×9-inch baking dish with nonstick cooking spray. In a large bowl, whisk together almond milk, maple syrup, vanilla, eggs, cinnamon and nutmeg. Pour egg mixture over the bread, making sure to soak each cube. If there are some dry pieces, simply press them down a bit to soak up some of the egg mixture. Cover and refrigerate at least 2 hours, or overnight!

In a small bowl combine brown sugar and butter. Squeeze together with your hands until it forms a crumbly mixtures. Sprinkle it over top of the french toast mixture.

Bake in the oven for 40-50 minutes. 
I used the sourdough bread since it’s a low glycemic index food which means it will cause a gradual increase in your blood sugar rather than a spike. Which we all know is a good thing.

Lastly, I used the @lakantosweetenerproducts as they are monk fruit based. It is zero calories, zero glycemic index, and one of the healthiest alternatives to sugar and they taste great!
