Dairy-Free Pesto

Ingredients
2 cup of basil
1 cup of spinach
½ cup of walnuts
¼ cup of olive oil
2 tsp of minced garlic
3 tbsp of nutritional yeast 
Juice of 1 lemon
Salt and pepper to taste

Directions
Place all ingredients in a food processor (a high speed blender could work too) and pulse until smooth. I like mine a little nutty so I don’t add any water. However, if it’s too thick, add water 1 tbsp at a time.

My favorite dish to top this on is the Cauliflower Gnocchi from Trader Joes. It’s the best! Let me know when you try it out!
