Have you tried sweet potato toast yet? I finally tried it to satisfy my avocado toast craving and it hit the spot! It is just as easy as pulling out a slice of bread but a healthier option.
Slice the sweet potato lengthwise into 1/4 inch thick slices. Place the sweet potato slices in a toaster on high for about 5-7 minutes or until tender. Top with desired toppings and enjoy! My favorite is avocado, sautéed spinach and an over easy egg with some everything but the bagel seasoning!
These can be stored in an airtight container in the fridge for a few days. Just throw them back in the toaster to warm it up.
