Spaghetti Squash Casserole

Spaghetti Squash Casserole. The EASIEST dinner to make. I love cooking spaghetti squash because its easy, delicious, and makes great leftovers. It has been saving us these past few weeks.

Ingredients
1 large spaghetti squash
1 jar of RAO’s tomato basil sauce
1 pack of chicken sausage cut up
mozzarella cheese for topping

Directions
Preheat the oven to 400 degrees. Cut the spaghetti squash in half. Clean out all the seeds. Drizzle with olive oil, salt, pepper, and garlic. Place cut side down on a pan and cook for 40-50 mins or until tender. While that is in the oven, cook the chicken sausage in a pan. Once the spaghetti squash is done pull it out of the oven and use a fork to scrape out the spaghetti. Place it in a casserole dish or dutch oven and mix in the tomato sauce and chicken sausage. Sprinkle the mozzarella cheese on top. Place back in the oven to broil for a few minutes until the cheese melts. Enjoy!

You can also throw in extra veggies for added nutrients! We have done zucchini and spinach and it is quite tasty. Let me know if you try it out!
